Prepare them ahead for an easy on-the-go breakfast, or savor them over the weekend with coffee and snuggles (breakfast in bed, yes, please!) 1 cup almond flour
1/4 cup brown rice flour
1/4 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/3 cup avocado oil
1/3 cup coconut nectar
1 large egg
1/2 cup grated carrots
1/2 cup grated unpeeled zucchini
1. Preheat the oven to 350 degrees F. Grease muffin tin or line with parchment.
2. Mix flour, salt, baking powder, baking soda, and cinnamon.
3. In a separate medium bowl, whisk together the oil, coconut nectar, and egg. Add the dry ingredients and mix until just combined. Mix in the grated carrot, grated zucchini, and raisins.
4. Fill the muffin cups 3/4 full with the batter, garnish tops with pumpkin seeds and bake for 15 minutes, until golden. Cool for 5 minutes. SAVOR!
