Gorgeous and Gluten-Free: Smoked Salmon and Leek Quiche (Paleo)

Prep time: 15 minutes
Baking time: 50 minutes
Makes one 9″ pie

Going gluten-free was one of the best decisions I’ve ever made. I used to feel lethargic and bloated at nighttime, and I was so exhausted that I would fall asleep right after dinner. I used to think it was my heavy work schedule, but I now know that gluten was the culprit. I feel 100 times better, more energetic, and my bloated feeling is gone. Plus, this is something you can bake on a Sunday and enjoy for any meal on Monday, Tuesday, Wednesday… you get the idea.

Multi-tasking to the tenth degree: feel good and look gorgeous on the go! 

Ingredients: 

1 Pastry Crust (recipe below)
2 teaspoons organic Coconut Oil
1 leek*, thinly sliced
2 oz Smoked Salmon*, sliced into small chunks
4 stalks asparagus, sliced on diagonal
6 eggs
1/4 cup organic milk
1/2 cup coconut milk*
1/2 tsp Himalyan Salt*
Sprinkle of nutmeg

Directions:

  1. Preheat oven to 325 degrees F.
  2. Heat coconut oil in skillet over medium heat. Add leeks and asparagus. Saute until tender.
  3. Beat eggs, milks, sals, nutmeg in a bowl. Add smoked salmon.
  4. Pour mixture evenly into the pastry crust.
  5. Bake for 20-25 minutes (depends on oven strength). Middle of pie should not be liquid.
  6. Cool, serve, savor!

Leeks are a natural diuretic and detoxify your skin by trapping harmful substances and flushing them out of your body. They cleanse your body, making your skin look radiant. The green leaves of leek contain 100 times more beta-carotene and twice as much vitamin C as in the white parts. This combination of vitamins as well as other powerful antioxidants protects skin against damage by free radicals and harmful ultraviolet rays of the sun.

Salmon is a beauty food because its nutrients play a starring role in keeping the skin’s outer layer soft and smooth due to its skin-beautifying Omega fatty acids. Salmon makes skin radiant, reduces wrinkles and puffiness. The Omega-3s in salmon reduce inflammation on the cellular level that can cause redness, wrinkles, and loss of firmness.

Coconut milk is high in  vitamin C, E and several B vitamins. Its fat retains moisture in your skin, giving it a softer and smoother texture.

Himalayan Salt is my favorite salt because it is naturally pink and contains 84 trace minerals that are helpful both internally and externally – and for skin conditions like eczema and psoriasis.

Pastry Crust: 

2 1/2 cups almond flour
1 T coconut flour
1 T coconut milk
3/4 tsp Himalayan Salt
4 T vegetable shortening

Directions:

  1. Preheat oven to 325 degrees F.
  2. Place ingredients in food processor and pulse for 1 minute.
  3. Press dough into 9-inch pie baking plate.
  4. Bake for about 10-15 minutes or until golden.
